Culinary Arts II students spent the week learning about the different varieties of cheese. They participated in cheese tasting, then made a variety of recipes incorporating cheese. Cheddar and Parmesan were used in scones. Cream cheese was used in cheesecake. Students used milk, yogurt, cream, and lemon juice to make fresh ricotta cheese. They incorporated mozzarella and Parmesan into a lasagna.
